I sometimes think that's just a large part of his appeal for me. To survive for 400 years, and still maintain a sense of humor...that's special. He could so easily have let the weight of all that time, and all that he's seen, and done, and lost...weigh him down. But he remains remarkably non-angsty. (Nothing wrong with angst, but it's tough in the long haul.)

My favorite scenes were the ones where Josef was having fun with Mick... Josef made the show IMO.

Seriously, though, there were so many elements that made us all love ML. I think Josef provided something unique, being that wise, old mentor in the guise of a snarky young businessman. Josef really is the vampire's vampire.
