They are a ground corn grain... once you cook them, they come out sorta like a cream of wheat or oatmeal... or sorta in between those... the grains (the kind I use) are very small, fine grains.
But there's not a lot of inherent taste. So you cook them and/or then bake and serve them with other flavors--butter, salt, cheese, garlic, scallions, or you can go sweet too, sugar or syrup...
They also go really well with salty ham... a Southern kind of ham...
I cook them all the time... but you rarely run into them outside the US South. So I was surprised to see the word on that Alex diner picture.
